Chicken has got to be one of the most universal meats we have today. You can do so much with it, and you get so much from it. Have you got a really terrific chicken recipe that every time your family sits down to the table puts a smile on their face? Most of us do have such a wonderful recipe, for some of us it is fried chicken, and for others it will be our famous chicken soup.
The funny thing about a chicken recipe is that you can take the same recipe and alter a couple of ingredients and have a whole new dish. Or you can take an existing recipe that does not contain any chicken at all, perhaps that famous pasta salad that you make, toss in some cubed chicken and you’ve got a whole new chicken recipe that will delight your friends and family for years to come. And of course from that one alteration, you can create a whole list of new chicken recipe dishes.
More than likely, if each of us thought about it, we have enough chicken recipes that we have created in our own kitchens to create a whole Chicken Recipe Cook Book! Just think of the sections you could have: Fried Chicken, Baked Chicken, Stewed Chicken, Chicken Soup, Chicken Salads, Chicken Dips, Roasted Chicken, Chicken Casseroles – And this is just touching the surface. Such a cookbook would become famous in most kitchens.
It is a safe bet to say that there is not a woman alive today who does not have some kind of a chicken recipe that is her special pride and joy. In some cases, it will be the thing she offers to cook when her children come home for the holidays. Or maybe in some cases it is this special fried chicken that she makes to coax a son home after too many months away!
There are men who are quite savvy in the kitchen as well. And there are a number of chicken recipes, especially for fried chicken that are out of this world --all created by the male gender. It may seem a surprise to hear this, but it really is a fact.
The next time you are looking for an excellent chicken recipe, whether it be fried chicken, chicken soup or something more exotic such as Chicken Florentine, don’t be surprised if the creator of the recipe is a male, and don’t be surprised if it puts your own current favorite fried chicken to shame!
And for a moment let us keep in mind the nutritional value of chicken. It is high in protein, low in fat, and absolutely no carbs when skinless. You may be surprised to learn that it is a rich source of niacin, vitamins B-6, B-12, Vitamin D, iron, and zinc! It is pretty close to a perfect meat.
How many mothers keep a chicken soup recipe in their kitchen for those times when somebody in the family is sick? They know the healing power of chicken!

Even if some of these can be considered plausible explanations, it goes without saying that eating out frequently is not recommended at all. An occasional 'food binge' might be okay even if you are a 'food faddie' or not, but frequent eating out, whatever the reasons for it, is unacceptable. Home cooking has its enormous charms, and thankfully, too few people deny the charms of home cooked food. Everyone is happy to have food cooked at home with excellent recipes. That is, everyone enjoys delicious home cooked food so far as they do not have to do the cooking themselves. In other words, cooking is forced to bear the stamp of a tedious chore. This is a rather unjust burden that is forced upon it. Cooking is an art, and a talent people can cultivate if they have some interest. Time is ripe for the reverse evolution of getting addicted to home cooking and delicious recipes instead of getting addicted to the chips and fries of fast food chains. Trying out new recipes has its own reward. There are plenty of recipes to choose from, starting from a variety of appetizers and ending with an array of desserts. Though some dishes may entail laborious work, there are enough simple ones you can choose from. And ensure that there is variety in your cooking. One of the reasons people opt to eat out is the monotonousness of home cooked food. Too many people use the same menu for lunch and dinner and this could make mealtimes unappetizing. Try out new and exotic recipes. Incorporate some novelty into your cooking. Different family members would obviously have different tastes, and unless there is variety and novelty in home cooked food, it is not possible to attract all family members to the meal table. Vegetarianism and Veganism is in fashion. Fusion food is a gourmet's passion. Outdoor grills are fun. Salad carving and food decor are arts that can be developed to perfection. Each of these simple statements offers a world of information and lots of challenges to those who are interested in home cooking and are keen to improve their knowledge of the art. Further, when you are using recipes, you have ample opportunity to concentrate on the nutritional aspects of the family's diet. Be careful of the calories in your dishes, even while giving importance to its taste and appearance. Barbecuing and grilling outdoors can be great fun. If you have space to manage that, it is one of the best facets of home cooking and an ideal way in which the whole family can join in the cooking and share its fruits together. Above all, remember that cooking is not just for one's own family. Invite your friends and relatives on festival days and have a barbecue outside or use your best recipes inside to entertain them. You will soon realize that it is a very rewarding experience. Perfect Pairings
May 14, 2008 – as published in the Beacon News and Naperville Sun
By Bill Garlough
Springtime signals a time of change. As the outside temperatures warm up, we shift our meals from heartier fare to lighter cuisine and our wine choices follow suit.
Red wine selections move to lighter pinot noir, beaujolais and rosé. White wines are popular in warmer weather, as they offer a cool, lighter and more refreshing beverage choice. Another shift is the role of salads which can move from a starter course to the main entrée.
About dressings
As our tastes become more adventurous, salads now can contain a variety of exotic greens and ingredients, like toasted nuts, unusual cheeses, fresh fruits, lettuces and herbs that create more flavorful experiences. The following are general salad guidelines.
• Creamy style dressings pair well with light to medium-bodied dry white wines, such as pinot grigio, soave classico and chardonnay with good acidity, which help balance the richness of creamy dressings.
• Traditional, acidic vinaigrettes overpower the acidity level of many wines, creating a less favorable pairing. The acidity of a homemade vinaigrette can be reduced by using a milder vinegar such as an Asian rice wine vinegar or a slightly sweet balsamic vinegar. Also, increasing the amount of oil in the dressing will reduce the acidity.
• Adding fruit puree (raspberry puree as an example) or fruit juice to a homemade vinaigrette in place of up to half of the vinegar helps soften and balance the flavors. Here are some classic combinations: raspberry, cherry – pinot noir; citrus – sauvignon blanc; apple, pear – riesling.
If you are using a bottled vinaigrette (not a creamy dressing), you can add a splash of the wine you’ll be drinking directly into the vinaigrette, to help connect the flavors.
Food, wine pairings
Here are some of my favorite main course summer salads: • Cold pasta salad with grilled salmon, chopped sweet onion and fresh green peas mixed with a creamy dill dressing. Rieslings complement the flavors of both salmon and dill and its slightly sweet acidity provides a perfect balance with this dressing.
• Grilled chicken caesar salad pairs well with an acidic style of Chardonnay and Pinot Grigio as they can stand up to the bold flavors of garlic and anchovies.
• Caprese salad, a combination of sliced, fresh mozzarella and tomatoes, is a perfect way to enjoy our homegrown or farm stand-fresh tomatoes. The somewhat bland mozzarella helps offset the high acidity of the tomatoes, allowing for a balanced white, like pinot gris, to pair well. When basil leaves or pesto are added to this salad, a crisp sauvignon blanc is a nice choice, as its herbaceous nature pairs well with basil.
• Asian chicken salad is popular and offers distinctive flavors of rice wine vinegar and sesame oil (add red pepper flakes to turn up the heat). Kabinett riesling’s crisp acidity and sweetness balance these Asian flavors and helps counter the spicy characteristics. Also, an Alsatian gewürztraminer is another good choice, with its spicy, sweet and lychee nut notes.
Asian Sesame Dressing
Here’s a dressing recipe that is easily made at home. This flavorful dressing created by My Chef Catering can be used on greens, cabbage or as a marinade for chicken or firm fish such as tuna.
4 cloves minced garlic
2 tablespoons minced fresh ginger
½ cup olive oil
1/4 cup toasted sesame oil
1/3 cup rice vinegar (not sweet or seasoned)
1/4 cup soy sauce (can use low sodium if you prefer)
4 tablespoons honey
¼ cup water
Place all ingredients in a one quart glass jar (or at least 1 pint size). Cover the jar with a tight fitting lid and shake well until all ingredients are mixed. Remove the lid and place the jar in the microwave. Heat for one minute just to ensure the honey is dissolved. Place jar in refrigerator with lid off until completely cool. Place lid tightly on jar and shake well before serving. Store covered in the refrigerator.
Serves 18.

Herbs are fun and easy to grow. When harvested they make even the simplest meal seem like a gourmet delight. By using herbs in your cooking you can easily change the flavors of your recipes in many different ways, according to which herbs you add. For more details go to: www.dishadvice.com Fresh herbs are great in breads, stews, soups or vegetables. Every time you add a different herb you have completely changed the taste.
If you are a beginner start slowly, add just a little at a time adjusting as you go along until you have it just right. You will see in most instances that an individual herb is associated with a particular food item. Basil is paired with tomatoes, Oregano with sauces, Rosemary with lamb and Chives with butter or cream cheese. Of course, none of them are limited to these items, but you will see them paired most often with that particular food. Use your imagination and experiment, experiment, experiment!
You can make herb vinegars for salad dressings, marinades, or soups. Herb oils are very useful in cooking whenever a recipe calls for it.
Fresh herbs as garnishes dress up any dish making it look truly spectacular. Lay individual sprigs of rosemary over broiled lamb chops. Chop fresh parsley and sprinkle it over the top of your potato salad. The combinations are endless and the outcome delicious.
Fresh herbs will keep in the refrigerator for several days but then you must freeze them. They can be frozen by laying them a paper towel and putting them in a plastic bag. Once they are frozen only use them in cooking not as garnishes. A friend of mine washes them, puts them an ice cube tray, covers them with water and then freezes them. When she needs them for soup, stews or sauces she just drops a cube in.
My favorite herbs to grow are basil, oregano, lemon balm, parsley and mint. Mint is great but be careful, mint can over run your garden. A tip here would be to bury an empty coffee can and plant the mint in it. The can prevents the mint from creeping all through your garden.
I love to make herb butters. Take a half of a cup of softened butter and mix in about 4 tablespoons of a fresh herb. For help visit: www.camping-outdoors-recipes.com Lay out a piece of saran wrap, place the butter in the middle roll the saran wrap up to form a log out of the butter. Put in the refrigerator and anytime you need a pat of butter just cut it off the log. (Hints for log butter: potatoes, bread, steaks, noodles or any kind of sauce).
A fresh herb in any salad dressing really makes it sparkle. You can use any herb or a combination, be creative.
I learned a trick a long time ago using basil, lemon and avocados to create and instant natural face mask. Put a big handful of basil in a blender and run it on high. Once the basil has been pulverized, throw in a half of an avocado and a large teaspoon of lemon juice, mix until smooth. Wash your face, pat it dry and gently rub the avocado mixture on. Leave it on as long as you like, then use warm water to it wash off.
These are just a few ways you can use fresh herbs from your garden. I am sure you will come up with many more.

There are thousands of Vegetarian Recipes, Vegan Recipes and Recipes for meat based dishes that are available on hundreds of websites. Some of these Home cooking recipes have been handed down through generations from mother to daughter and mother-in-law to daughter-in-law. Although humans have been consuming vegetables and plant products, along with meat and other animal products, for many millennia, vegetarianism dissuades consumption of all types of meat, and eggs too. Some communities do not consider eggs as a non-vegetarian item, but in countries like India, eggs are not considered vegetarian and are not consumed by strict vegetarians. Many individuals are used to meat and egg based dishes, along with a few veggies in salads and soups. But they are unaware that there are thousands of Veg Recipes available that can be used to make a complete meal, including soups, starters, appetizers, main course dishes, and desserts. Vegetarianism evolved with religions and cultures over many millennia. Many religions like Buddhism, Jainism, and Hinduism have strict rules regarding food consumption. Meat and eggs, and products made from these are strictly prohibited in many religions, castes, and communities. Thus evolved the dependence on vegetables, fruits, herbs, and spices. This led to the evolution of Vegetarian Recipes over the millennia, with each caste, community, and even individual households having their own variations of standard recipes and ways to cook food. Vegetarianism is gaining ground in western countries like the US, UK, and Europe, but the opposite is happening in Eastern countries like India, where people are becoming more aware of western meat dishes and recipes. Although vegetarianism does not exclude animal products like milk, and products made from milk, like butter, Ghee, sweets, chocolates, desserts, ice creams, etc, Veganism excludes these too. Donald Watson and Elsie Shringley started veganism and the Vegan Society in 1944. Veganism excludes all animal products as food, including milk and milk products. Anything that involves exploitation of animals for food, clothing, or any purpose is excluded for use. As veganism evolved, so did Vegan Recipes, which excluded all animal products for food consumptions. Veganism still includes all vegetables, fruits, herbs, and spices, and there are hundreds of Recipes available for vegans. Although Fast food and eating out in restaurants has become a necessity due to the hectic lifestyle, many families are turning back to healthy home cooking and the recipes handed down from past generations are coming in handy. Many individuals are also willing to try new Veg Recipes, meat and egg based Recipes and even Vegan Recipes. As they say, variety is the spice of life, and adding some variety to daily meals is sure to entice the family back to the dining table, instead of ordering pizzas and burgers, or taking the family out to lunch and dinner, which is an expensive affair. be exactly the same but will still be good.
Raspberries are delicate so the less you handle them the better. Add them at the very end and

People don't have the time to prepare the food Julia Child used to show on her cooking program. Things have changed. No longer focused on the kind of extravagant meals Julia made famous, television now displays easy dinner recipes. Easy doesn't have to be bland. Most people couldn't eat that fancy cooking every day.
There is more than television as a source for these dinner cooking ideas. The Internet is full of food. That doesn't mean just the cooking show web sites, although they have a lot of terrific information. Some web sites show healthy meals while others focus on vegetarian food. Every type of meal and food are covered not only by one web site, but by thousands. It would take a life time to read it all.
Easy isn't bland. Simple meals aren't bad tasting. Sure hot dogs are easy to make. They're good, but it's a little common or generic. Eat a corn dog instead. They're simple and delicious. Dip a dog in flour, corn meal, milk, salt and sugar, then fry it. Make it more authentic by inserting a stick.
Corn dogs aren't healthy. Easy doesn't mean not healthy. Broil a chicken breast, remove the skin, cut it into strips or chunks, toss it into a salad. That was easy. It's also delicious and good for you. Make it soup and salad with some chicken soup. Salads can be made from almost anything. Some diced ham, hard boiled eggs and lettuce makes a great dinner salad.
Here's a little history lesson. Dinner and supper started out as separate meals in colonial times. Physical work required a late afternoon meal, called dinner. The long hard day ended with a larger meal called Supper. New lifestyles and types of work meant dinner and supper changed over the years until, for many, they merged. Physical laborers commonly maintained the tradition of separate supper and dinner into the 1970's, and some people still do it today.
Separating supper from dinner isn't necessary. But try a lighter dinner type meal at supper time, or maybe we can call it dupper Who cares? Easy dinner recipes can make it fantastic.

Section II- Accessories
Section III- Main Courses
Section IV- Desserts
BONUS- Top 10 Tips to Save Thousands of Calories At Party Time
1.) Go Naked: Replace all buns or breading for sandwiches with a lettuce wrap alternative to cut calories, stabilize blood sugar, and boost fiber and micronutrient intake.
2.) Hydrate: Drink at least two to four cups of water before eating AND one to two cups every 15-30 minutes after you start eating to fill your stomach and prevent overeating that can be triggered by dehydration.
3.) No Empty Liquid Calories: Stay away from fruit juices, regular sodas, and alcohol. Opt for water, tea, or low calorie/carb beverages in moderation. Eat your calories, don't drink them.
4.) Do not fast in preparation for a feast as it will turn your body into a famished fat-storing machine the next time you eat. The resulting low blood sugar levels that come from not eating for four hours or more make you crave junk foods high in both fat and refined sugars.
5.) White to Brown to Green: Use whole grain alternatives for any starch you serve at your party (e.g. chips, tortillas, breads, rice, pasta). Whole grains have more vitamins and minerals and are high in fiber, which means they won’t have as negative of an impact on your blood sugar compared to its white counterparts. However, if you want to be a nutritional boy or girl scout, go one step further by replacing all brown with green in the form of green veggies (see “Go Naked” above).
6.) Focus on eating lean proteins and fruits and veggies first. Use these in unlimited amounts as needed to fill you up.
7.) Never eat directly out of the bag or community bowl and use smaller plates to put your food on. Set a limit to how much you are going to eat ahead of time. Don't plan to fail!
8.) Replace Gold With Green: Opt for guacamole over cheese for your salads and chips. Guacamole is not only low in saturated fat and high in heart healthy monounsaturated fats but it also has a ton of fiber that will help fill you up fast and prevent overeating. Though cheese is a true super food in moderation, it is very easy to overeat especially when mixed with refined carb sources like white chips and pizza.
9.) Replace Flour with Protein Powder: Few people know that protein powder makes a great cooking or baking substitute for flour (e.g. protein cookies). By adding protein and reducing carb intake you can boost metabolism.
10.) Chew-Chew: Eat slowly and require a certain number of chews before you swallow to allow your brain enough time to get the “I’m full” signal (e.g. 20 pre-swallow chews).
