12 oz frozen lemonade
2 liters lime soda

1 carton cottage cheese, small-curd
1 can of berries of your choice, in thick syrup,
Food coloring
To prepare:
First, make the jello according to instructions. Set aside to chill. In a bowl, mix the cottage cheese and your choice of berries carefully, as cheese constitutes the brain matter. Add food color. On a serving plate, place a few tablespoonfuls of your jello, which makes for your brain fluid. Drizzle with thick syrup. Top with the cheese-berries mixture. Serve.

In a large mixing bowl, combine all the ingredients. Mix well. Transfer mixture to a 3-quart casserole dish that has been sprayed with non-stick cooking spray. Cover and bake 1 hour. Uncover; bake 15-20 minutes longer or until rice is tender.

BELGIAN CARROTS
1 lb carrots, thinly sliced
2 tbsp chopped onion
1/4 cup unsalted butter
1 tsp Splenda
1/4 cup chopped parsley
salt & pepper to taste
Clean carrots and slice thinly. In a small saucepan on medium-high heat, brown onion slightly. Add remaining ingredients, except the parsley, to the onion in saucepan. Cover with a tight fitting lid and cook over low heat for 15 to 20 minutes. Remove from heat and sprinkle with parsley before serving.
GELATIN BUFFET SALAD
2 small boxes or 1 large box flavored sugar-free gelatin
2 cups boiling water
8 ice cubes
20 oz can crushed pineapple in its own juice, drain and save juice
1 pkg Dream Whip topping mix
8-oz cream cheese, softened
1 cup unsweetened pineapple juice
3/4 cup Splenda
3 tbsp flour
3 eggs, beaten
1 tbsp lemon juice
grated low-fat cheddar cheese
For first layer: Add gelatin to boiling water and stir until dissolved. Add ice cubes and pineapple. Mix well and chill until set.
APPLE-PECAN COOKIES
3/4 cup butter, softened
1 cup Splenda, granulated
2 tsps freshly grated lemon peel
2 tsps molasses
2 large eggs
1/2 cup unsweetened applesauce
1/3 cup frozen apple juice concentrate, thawed
1 3/4 cups all-purpose flour
2/3 cup old-fashioned oats
1 tsp baking soda
1 1/2 tsps ground cinnamon
1/8 tsp ground nutmeg
1 cup diced fresh apples
1/2 cup chopped pecans
Preheat oven to 325 degrees. Lightly spray cookie sheets with vegetable cooking spray.
In a large mixing bowl, beat butter, Splenda, lemon peel, and molasses on high speed with an electric mixer for 1 minute. Add eggs, one at a time, beating just until yellow disappears after each addition. Combine applesauce and apple juice concentrate; set aside. In a medium mixing bowl, combine flour, oats, soda, cinnamon, and nutmeg. Gradually add to butter mixture alternately with applesauce mixture, beginning and ending with the flour mixture, beating at low speed until blended after each addition. Stir in apples and pecans. Drop by tablespoonfuls, 1 1/2 inches apart, onto the prepared cookie sheets. Bake 10 to 12 minutes until lightly browned. Cool on wire racks. Store in airtight container.

60ml (2 fl oz) of carrot juice 60ml (2 fl oz) of apple juice 60ml (2 fl oz) of beetroot juice 60ml (2 fl oz) of broccoli juice ½ tsp kelp powder ½ – 1 tsp chopped fresh parsley A squeeze of fresh lemon juice.
Add the above to a juicer and drink straight away whilst fresh.
Red Carrot Rocket
4 carrots 1 large raw beetroot 3cm section of cucumber
Add the above to a juicer and drink straight away whilst fresh.

Healthy Beef Skillet:
Ingredients:
1 Tbsp paprika
1lb top round beef
1 ½ tsp oregano
½ tsp chili powder
¼ tsp garlic powder
1/8 tsp red pepper
¼ tsp black pepper
1/8 tsp dry mustard
3 C shape onion slice
8 red-skinned potatoes
2 C beef broth
2 large carrots, chop into thin, 21/2-inch strips
2 large garlic
Instructions:
- Slice the beef thinly across the grain into long thin strips, measuring to about 1/8 inch long and 3 inches wide.
- Combine oregano, paprika, garlic powder, chili powder, dry mustard, red pepper and black pepper. Coat strips of meat with the spice mixture.
- Spray to a large non-stick skillet.
- Preheat the pan and place it on high heat.
- Add the meat.
- Cook and stir for about 5 minutes.
- Add onion, potatoes, garlic and broth and cook over medium heat for 20 minutes.
- Stir in carrots and lay green mustard. Cook until the carrots are tender, or for about 5 minutes.
- Serve the beef skillet in large serving bowl with crusty bread for dunking.
Oven Fried Chicken
Ingredients:
1 tablespoon Dijon mustard
½ cup butter milk
2 cloves garlic
1 tablespoon hot sauce
2 ½ to 3 pounds chicken legs trimmed and chop into drumsticks and thighs, skin removed
2 tablespoons sesame seeds
½ cup whole wheat flour
1 ½ teaspoon paprika
1 teaspoon baking powder
1 teaspoon dried thyme leaves
1/8 teaspoon salt
Olive oil cooking spray
Freshly ground pepper
Directions:
- Whisk mustard, buttermilk, hot sauce and garlic in a shallow glass dish until well blended.
- Add the sliced chicken and turn over to coat. Cover and marinate in the refrigerator for about 8 hours.
- Preheat the oven at 425 degrees Fahrenheit. Line the baking sheet with foil. Place a wire rack in the baking sheet and coat it with the cooking spray.
- Whisk sesame seeds, flour, thyme, paprika, salt, pepper, and baking powder in a small bowl. After that, place the flour mixture in a large sealable plastic bag or paper bag.
- Place one or two pieces of chicken at the paper bag and shake to coat.
- Spray the pieces of chicken with cooking spray.
- Bake the marinated chicken until it becomes golden brown (40 to 50 minutes)
- Serve in a large bowl.

If you love sweet potatoes like I do, I think you will enjoy this easy to make soup recipe. What I really like about this soup is the hint of orange flavoring mixed with the sweet taste of the potatoes. If you wanted to save time, you could use canned yams, but I feel it doesn't taste as delicious...as if you used the fresh ones. This recipe will make 4 servings.Orange Spice Sweet Potato SoupIngredients:2 tablespoons vegetable oil2 lbs. sweet potatoes (yams), diced1 large carrot, chopped small1 onion, finely chopped1 clove of garlic, finely chopped2 1/2 cups vegetable broth1 1/2 cups unsweetened orange juice (not concentrate)1 cup plain yogurt1 tablespoon chopped cilantrosalt and black pepper to taste1 teaspoon cinnamonPeel and dice your sweet potatoes into 1 to 2" chunks. Heat the vegetable oil up in a large saucepan or stock pot. Stir in the diced yams, chopped carrots, onions and chopped garlic, cook over medium heat, stirring constantly to prevent sticking. Pour in the vegetable broth and orange juice, cover and bring to a full boil. Reduce the heat to low, and cook the soup for 20 to 25 minutes, stirring occasionally to prevent sticking and scorching. Remove lid and check to see if the yams and carrots are fork tender. If so, pour the mixture into your blender and process for 1 1/2 minutes until its pureed and smooth. Return the soup back to the saucepan. Stir in the plain yogurt, cilantro and season to taste with the salt, black pepper and cinnamon. Let soup stand for 1 minute before serving.

One of the most satisfying and delicious home cooked meals you will ever make is a pot roast cooked in a slow cooker, also known as a crock pot. It is especially wonderful during cold winter months. This easy to make, tender and savory pot roast recipe is sure to be a huge hit with your friends and family. There are many variations to this dish and if you ask 5 different people how they prepare a pot roast, you will more than likely receive 5 different answers. While the ingredients for making pot roast may vary from cook to cook, the method is generally the same: Season then brown a piece of meat on all sides and then slowly cook the meat along with a mix of vegetables in some type of broth mixture until the meat is fork tender.
The very first step to cooking a pot roast is to choose a cut of meat. There are several cuts of meat that will work for pot roast, but some are better than others. I recommend that you visit your local butcher and ask him or her to recommend a good piece of meat for your pot roast. If however, there is no butcher shop close by, visit your local supermarket. Most supermarkets will put helpful labels on the meat telling you what that cut of meat is generally used for. Common cuts of meat used for pot roast are Chuck, Brisket, Top Round and Bottom Round. Most people prefer chuck as the meat of choice, but I find it a bit too fatty and prefer to use Bottom Round. Experiment with different cuts to find the one you like best. For the purpose of this recipe, choose a cut of meat that is 3 - 5 Pounds.
I like to use a variety of different vegetables when I make this dish. It makes it more interesting than the usual carrots, celery and onions that many recipes call for. The best vegetables to accompany pot roast in my opinion are carrots, celery, onions, garlic, potatoes, turnips and rutabaga. You are free to use all of these or just a few. The choice is yours and nothing is written in stone. I just love the different textures and flavors that these different vegetables provide. Here are the measurement estimates for the veggies I like to use. Use more or less depending on how big your crock pot or slow cooker is. You don't want to overcrowd the crock pot.
1/2 Cup of Chopped Turnip 1/2 Cup of Chopped Rutabaga 1/2 Cup of Chopped Onion 1/2 Cup of Chopped Carrot 1/2 Cup of Chopped Celery (Look for celery with celery leaves still attached. The leaves impart an excellent flavor to the broth) 3 Garlic Cloves Minced
People use a variety of liquids to braise a pot roast and add their own unique flavors to this dish. People use a combination of water, beef stock, red wine (choose a wine that you would drink, not a cooking wine) and even beer. I like to use simple water mixed with beef stock. I usually use one part water to one part beef stock and use enough to where the roast is only submerged half way.
Ok, we are ready to start cooking this beautiful dish.
Season the meat with salt and pepper to taste. In a large skillet over medium heat, brown the meat on all sides, in a tablespoon of vegetable oil.
Place your chopped vegetables in the bottom of your slow cooker. Place the meat on top of the vegetables and then pour your liquid over the top.
Cover the slow cooker and cook at the lowest setting possible for roughly 8-10 hours. Meat should easily fall apart when pierced with a fork and vegetables should be soft. Remove meat and vegetables and place on a serving platter.
Now to make the gravy. Whisk together, in a sauce pan, 1/4 cup of cold water and 2 tablespoons of flour until smooth. Slowly incorporate 1 cup of the hot broth from the pot roast and bring to a simmer stirring constantly until thickened.

Potato and Vegetable Enchiladas
Ingredients:8 oz shredded Cheddar cheese1 head broccoli (cut into florets)8 oz whole button mushrooms3 small zucchini (chopped)2 cups carrots (chopped)1 package instant mashed potato flakes1/4 cup olive oil3 cups water1 cup milk1/4 cup butter1 package corn tortillas3 cups enchilada saucesalt and pepper to taste
Directions:In a large bowl, add the broccoli, zucchini, mushrooms, and carrots. Drizzle a bit of olive oil over the vegetables and season them with salt and pepper. Spread the vegetables in a baking dish and roast them at 425 degrees F for about half an hour. Stir the vegetables after the first 15 minutes. After they have roasted, remove them from the oven and set aside. In a large sauce pan, bring the water, butter, and milk to a boil, then remove from heat. Mix in the mashed potato flakes. Let it stand for a few minutes, then stir until they turn smooth. Add in the roasted vegetables. Heat a frying pan over medium heat and warm the tortillas on both sides. This allows you to handle them without the tortillas breaking. Dip the tortillas in enchilada sauce, then put a spoonful of the potato/vegetable mixture into the center. Sprinkle a little cheese on top, then roll the tortilla. Place the tortillas in a 9 x 13-in baking dish, topping with the remaining enchilada sauce and cheese. Bake at 350 degrees F for about 20 - 30 minutes, or until the enchiladas are warm all the way through.
Broccoli and Rice Casserole
Ingredients:1 1/2 cup cooked rice1 (10 oz.) bag frozen chopped broccoli1 (10 3/4 oz) can cream of chicken soup1 cup grated American or cheddar cheese1/2 cup chopped onion1/2 cup chopped celery1 tsp butter1/4 tsp salt1/8 tsp pepper1 tbsp bread crumbs
Directions:Steam or boil the broccoli, then drain well. Heat the butter in a skillet and sauté the onion and celery until the onions have turned translucent. Combine the rice, cream of chicken soup, broccoli, cheese, onion, celery, salt, and pepper. Mix well, then spread into a buttered or greased 3-quart casserole dish. Melt the butter and toss the breadcrumbs in it. Sprinkle over the casserole, then bake at 350 degrees F for 45 - 50 minutes.
Borscht
Ingredients:2 quarts beef stock3 tablespoons butter1 cup cabbage, finely chopped1 cup potatoes, diced1/2 cup carrots, diced1 stalk celery, minced1 onion, chopped1 1/2 cups canned tomatoes1/2 cup juice (from can of beets)1 cup cooked or canned beets, diced1 teaspoon vinegarchopped dill or parsley (for garnishing)sour cream
Directions:In a skillet, melt the butter and sauté the cabbage, carrots, celery, onion, and potatoes. After about five minutes, add the beef stock. Blend or push the tomatoes through a sieve until they are fine, them to the pan. Add the beet juice then cover and simmer over a low heat. Allow the vegetables to become tender, but avoid letting them get soft and squishy. Add the chopped beets and vinegar and season with salt and pepper. Remove from heat and serve with a dollop of sour cream or a sprinkle of parsley over each bowl.
Sweet and Sour Vegetables
Ingredients:1 lb frozen Oriental vegetablesPeanut or olive oil for sautéing1 tbsp corn starch1/2 inch section of ginger (peeled and minced)1/2 cup pineapple chunks (drained, but save juice)3 tbsp brown sugar1 tbsp rice vinegar1/2 tsp soy sauce1/2 cup pineapple juice (saved from pineapple chunks)1 garlic clove (minced)
Directions:Mix the corn starch, ginger, pineapple chunks, brown sugar, rice vinegar, soy sauce, and pineapple juice in a large bowl. In a wok or large skillet, heat 2 tbsp of peanut or olive oil until very hot. Add the vegetables and stir fry at a high heat until the vegetables start to brown around the edges. Remove the vegetables to a bowl or serving dish. In the wok or skillet, discard all but 1 tsp of the oil, then add the sauce. Cook for about 5 minutes, or until the sauce turns translucent. Add the garlic during the last minute of the sauce's cooking time. Drizzle the sauce over the vegetables in the serving dish, or allow diners to pour their own sauce.

Herb Roasted Pheasant with Wild Rice StuffingCopycat RecipeYield: 10 portionsIngredients10 Pheasant breast, boneless, remove tenders and reserve for stuffing, cut small pocket in side of breast for stuffing½ cup Olive oil with chopped rosemary, thyme and sage1 lb. Wild rice, long grain2 quarts Chicken stock or canned chicken broth2 Carrots, diced½ Onion, diced½ cup Dried apricot, small diced1 Tablespoon Salt and pepper mix2 Tablespoons Garlic, roastedDirections1. Boil the rice with the chicken stock, cook until soft and most of the liquid is gone.2. Add the onion, carrot, garlic and apricot. Cook until the vegetables are soft and all liquid has been absorbed. Refrigerate rice mixture until cold. 3. In a food processor, puree pheasant tenders to a paste consistency to use as a binder for rice mix. 4. When rice is cool, add the pheasant puree to the rice until well mixed. Adjust seasoning with salt and pepper and return to refrigerator until ready to stuff.5. Preheat oven to 400 degrees F.6. Make 10 small football shaped patties of the rice mix, stuff inside the pheasant, being careful not to overstuff the pheasant. Rub herb/oil mixture on top and bottom of the pheasant, season with salt and pepper. Place the pheasant on a heavy gauge roasting pan and then in a preheated oven for approximately 8-10 minutes. Remove from oven and cover with lid or foil and allow to rest for 10 minutes. Serve over sauté of spinach.*Pheasant can be substituted with chicken.
