DIABETICS CARROT BREAD
4 eggs
1 3/4 cups Splenda Granular
1/4 cup sugar
1/4 cup vegetable oil
1/2 cup water
3 cups all-purpose flour
2 tsp baking powder
1 1/2 tsp baking soda
2 tsp ground cinnamon
1/4 tsp salt
2 cups shredded carrots
Preheat oven to 350 degrees. Spray two 9-inch loaf pans with nonstick cooking spray; set aside.
In a large mixing bowl, combine eggs, Splenda and sugar. Beat at medium speed of electric mixer until the mixture thickens. Gradually add in the oil and water; beat until well combined.
Combine the flour, baking powder, baking soda, cinnamon, and salt; gradually add to the egg mixture. Stir just until moistened. Fold in the carrots. If batter seems too dry, add a tablespoon of water (moisture will depend on how wet or dry the carrots are). Spoon the batter into the prepared loaf pans. Bake at 350 degrees for 1 hour or until a wooden toothpick inserted in the center comes out clean.
COCONUT TEA BREAD
3 cups flour
3 tsp baking powder
1 tsp salt
1 cup Equal Sugar-Lite
1 1/3 cups unsweetened flaked coconut
1 tbsp grated orange OR lemon rind
1 egg
1 1/2 cups milk
1 tsp vanilla
Preheat oven to 350 degrees.
Sift flour, baking powder, and salt into large mixing bowl. Stir in Equal, coconut and fruit rind. Beat egg in a medium mixing bowl; stir in milk and vanilla. Stir milk mixture into dry mixture and mix just until mixed well and moistened. Do Not beat. Spray a 9-inch loaf pan with vegetable oil spray. Pour batter into pan and bake for 1 hour and 10 minutes at 350 degrees.

Tuna and Vegetable Salad
Ingredients
8 ribs of celery from the heart with leafy tops - chopped
6 plum tomatoes - chopped
1 fifteen-ounce can of drained chickpeas.
1 medium sized onion - chopped
A handful of flat-leaf parsley leaves - coarsely chopped
1/2 cup of pitted black olives - coarsely chopped
2 six-ounce cans of drained Italian tuna
2 lemons
1/3 cup of EVO oil
Salt and freshly ground black pepper as per your liking
Directions
Combine celery, tomatoes, chickpeas, onions, parsley and olives in a bowl. Flake tuna and add it to the salad. Dress the salad with juice taken from 2 lemons and roughly 1/3 cup of EVO oil. Season the salad with salt and pepper as per your liking.
T-Bone Steaks with Chopped Green Garni, Broiled Tomatoes with Cheese, Olives and Herbs
Ingredients
6 one-inch-thick T-bone steaks
1/4-cup EVO oil, and some more oil for drizzling
6 vine-ripe tomatoes - tops removed - seeds scooped out
Salt and pepper as per your liking
3 slices of good quality bread, crusts trimmed and torn into pieces
1/2 cup pitted good quality olives, a couple of handfuls
3 handfuls of flat-leaf parsley tops
5 to 6 stems of fresh sage - stripped
3/4 cup of grated Romano, 3 handfuls
2 cups of arugula - chopped
1 cup or 20 leaves of shredded or torn basil
1/2 lemon for its juice
Directions
First heat the oven to 375 degrees F.
Heat a large griddle or large skillet over high heat. Apply roughly a quarter cup of EVO oil on the meat with the help of a brush. Sear the steaks 2 minutes on each side, 3 of them at the same time. Set the steaks on a baking sheet. Once the steaks are all seared off, transfer them to oven and roast for 5 to 6 minutes to get it done medium, subtract or add 2 minutes to this time for making it medium- rare or medium-well.
Place tomatoes on a broiler pan and season them with enough salt and pepper. Combine the bread, olives, parsley, sage and Romano in the food processor and then pulse grind the mixture. Dress the mixture with some EVO oil, salt and pepper, and fill the tomatoes.
Dress chopped arugula and basil with a little lemon juice, EVO oil, salt and pepper.
Remove the steaks and let them rest for a while. Switch the broiler on and broil the tomatoes for a couple of minutes until the cheese and breadcrumbs on top turns brown.
Serve the steaks with greens on the top and broiled tomatoes along side.

--Chinese Sesame Chicken--
2 Chicken Breast, skinless & boned pieces about 6-8 oz.
5 tablespoons corn starch
Pinch of salt
6 tablespoons water
1/2 teaspoon minced ginger
1/2 teaspoon chopped fresh garlic
1 teaspoon chili oil depending on degree of spicy of your taste
1/2 teaspoon roasted sesame seeds
Salad oil for deep fry
Iceberg lettuce
Sauce:
8 tablespoons Chicken broth
1 tablespoon Dark soy sauce
2 tablespoons Soy sauce
4 tablespoons Sugar
4 tablespoons White vinegar
1 teaspoon Corn starch
1 teaspoon Sake
1/2 teaspoon Oyster sauce
In a small bowl, mix all sauce ingredients until well blended.
Cut chicken breast into ½ inch strips. Place in a bowl with water and salt and let soak for about 15 minutes. Do not drain. Add cornstarch and mix well, coating chicken. Add 1 tablespoon salad oil to chicken and mix to smooth and separate chicken strips.
Heat wok - or frying pan - with medium flame, pour in oil for deep frying. Heat oil up to about 325 degrees. Place coated chicken strips in piece by piece and fry until it is crispy and cooked through. Remove chicken and pour off oil.
Heat up wok again with an additional 1-teaspoon salad oil. Add ginger, garlic and chili oil stir frying until fragrant. Add sauce mix, stir until thickens. Add fried chicken strips and mix well to coat all chicken strips with sauce. Sprinkle on the sesame seeds before serving on a bed of lettuce.
-- Jiangsu Fried Rice--
1 c Uncooked rice
5 T Butter
1 c Chopped onion
1 c Chopped carrots
2/3 c Chopped scallions
3 T Sesame seeds
5 Eggs
5 T Soy sauce
Salt & Pepper
Cook rice according to package directions. In a large skillet, melt butter.
Add onions, carrots and scallions. Saute until carrots are translucent.
Set aside. Heat oven to 350 degrees. Place sesame seeds in a shallow pan.
Bake until golden brown (10 to 15 minutes), shaking pan occasionally for even color. Lightly grease another skillet. Beat eggs. Pour into hot skillet. Cook as you would scrambled eggs. Combine rice, vegetables, sesame seeds and eggs.
Add soy sauce. Stir. Salt and pepper to taste.
--Tossed Salad with Ginger Salad Dressing--
Create your favorite Tossed Salad
Ginger Salad Dressing:
1/2 cup minced onion
1/2 cup peanut oil
1/3 cup rice vinegar
2 tablespoons water
2 tablespoons minced fresh ginger
2 tablespoons minced celery
2 tablespoons ketchup
4 teaspoons soy sauce
2 teaspoons sugar
2 teaspoons lemon juice
1/2 teaspoon minced garlic
1/2 teaspoon salt
1/4 teaspoon black pepper
Combine all ingredients in a blender. Blend on high speed for about 30 seconds or until all of the ginger is well-pureed. Makes 1 3/4 cups.

3 1/2 lbs. peeled Carrots
1-1/2 lbs. Sugar
1 Tbsp. vanilla 1/4 Cup flour
6 eggs
1/2 lb. Margarine
Powdered sugar
1. Steam or boil carrots until extra soft. Drain well.
2. While carrots are warm, add sugar, baking powder, and vanilla.
3. Whip with mixer until smooth.
4. Add flour and mix well.
5. Whip eggs and add to flour mixture, blend well.
6. Add softened margarine to mixture and blend well.
7. Pour mixture into baking dish about half full as the souffle will rise.
8. Bake in 350-degree oven about 1 hour or until top is a light golden brown.
9. Sprinkle lightly with powdered sugar over top before serving.

These chops marinate in the pineapple mixture for up to 24 hours. This allows for a "make ahead" marinade and sauce that saves prep time later. Continue with the fruity flavor by serving with Orange-Almond Salad. Steam ears of corn-on-the-cob for your vegetable. Should you opt for fresh corn, especially during the summer when many have it in your gardens, for dieters and diabetics, break large ears in half for a proper serving size. Then finish off the meal with a refreshing dessert of Chocolate-Orange Parfaits. You will have served a quick, easy, tasty and budget-friendly meal. Perfect for busy moms or anyone wishing to spend less time in the kitchen without opting for bags of "fast-food".
PINEAPPLE PORK CHOPS
1 can (8 oz) crushed unsweetened pineapple, drained
1 tbsp honey mustard
3 garlic cloves, minced
1/4 tsp salt, optional
4 large bone-in pork chops
2 tsp canola oil
In a mixing bowl, combine pineapple, mustart, garlic and salt. Blend the mixture well. Place 1/2 cup of pineapple mixture into a large resealable ziptop bag. Add the pork chops to the bag, seal and turn to coat chops. Refrigerate up to 24 hours. Cover remaining pineapple mixture and refrigerate.
Drain and throw-out the marinade from the pork chops. In a nonstick skillet, heat oil and brown the chops on both sides over medium heat. Add remaining pineapple mixture to skillet and cook 10-15 minutes or until the juices run clear.
1 pork chop: 262 calories, 8 g carbs, 31 g protein
ORANGE-ALMOND SALAD
3 cups assorted salad greens
2 navel oranges, peeled and sectioned
1/2 celery, thinly sliced
2 tbsp chopped green onion
1/4 cup cider vinegar
1/4 cup SPLENDA or Equal Sugar-Lite
2 tbsp canola or olive oil
1/4 cup slivered almonds, toasted
In a large salad bowl, combine greens, oranges, celery and onion. Set aside. Blend vinegar, SPLENDA or EQUAL and oil in a small mixing bowl. Using a wire whisk, whisk until smooth. Drizzle dressing over greens . Toss gently to coat. Put into individual salad bowls and sprinkle with almonds.
CORN-ON-THE-COB
4 small ears of frozen corn-on-the-cob cooked according to package directions
Brush with melted butter for serving.
CHOCOLATE ORANGE PARFAIT
2 cups fat-free milk
1 pkg sugar-free instant chocolate pudding
1/2 cup nonfat dry milk powder
3/4 tsp grated orange peel + more for topping
1 cup evaporated skim milk
sugar-free whipped topping, optional
In a large bowl, combine skim milk, pudding mix, nonfat dry milk and 3/4 teaspoon orange peel. Mix at low speed until just blended, 1 to 2 minutes. Using a seperate, clean, chilled bowl and chilled beaters, beat evaporated skim milk until soft peaks form. Fold into thickened pudding mixture. Spoon into dessert glasses and sprinkle with grated orange peel. Top with sugar-free whipped topping if desired.
Note: This recipe, without the topping, has 13 g protein and 26 g carbs

Chinese-style meals are not only tasty, they are usually quick, easy, inexpensive and healthy. In my vintage recipe collection I have two great recipes to share.
Chicken and Vegetables Chinese is definitely a recipe that has the above mentioned attributes. It is easy to make, doesn't take much time, the ingredients aren't expensive, and it makes six servings of only 200 calories each. That's a pretty good deal!
CHICKEN AND VEGETABLES CHINESE
1 lb boneless, skinned chicken breast cut into 1 1/2" pieces2 cans chicken broth or 4 to 5 chicken bouillon cubes dissolved in 3 cups boiling water1/2 cup raw rice2 tbsp soy sauce1/4 tsp ground ginger2 cups sliced carrots1 cup sliced green onions1 small can chinese vegetables, drained1/2 cup cooking sherry1 clove minced garlic1/4 tsp sage1/2 cup sliced celery1/2 cup sliced green pepper (bell pepper)6-oz pkg frozen pea pods or peasBrown chicken in a large Pam sprayed pan. Add broth, rice, sherry, soy sauce, garlic and ginger. Simmer, covered, 15 minutes. Add remaining ingredients and simmer until tender. Makes 6 servings of about 200 calories each.
Sweet and Sour Pork slow cooks for one hour but otherwise is a quick recipe. Again, it is not expensive, it is easy and again, it is a healthy meal.
SWEET AND SOUR PORK
1 lb pork tenderloin, cut into stripsoil for browning1/3 cup water1 1/2 tbsp cornstarch1/3 cup brown sugar1/3 cup vinegar3/4 cup pineapple juice2 tsp soy sauce1 cup sliced mushrooms2 cups pineapple chunks1 green pepper, cut in strips
Brown pork in oil. Add water and cook slowly for 1 hour. Add cornstarch, brown sugar, vinegar, pineapple juice, and soy sauce; mix well. Simmer 15 minutes. Add remaining ingredients and simmer 5 minutes. Serve over rice.

8 cups torn iceberg lettuce
1 cup radishes, thinly sliced

2 oz cooked white turkey meat, chopped
2 slices American cheese, diced
2 slices Swiss cheese, diced
1 large tomato, chopped
1 hard boiled egg, chopped
1/3 cup your favorite low-fat, sugar-free dressing
In a large salad bowl, combine lettuce, radishes and green onions. Cover bowl and refrigerate until thoroughly chilled or use ingredients that have been in the refrigerator. Pour dressing over mixture and toss to coat. Top with remaining ingredients.
Makes 8 servings, 1 1/2 cups each
GARDEN-CHICKEN SOUP
6 cups water
2 cups tomato juice
1 cup diced, peeled potato
1 medium onion, chopped
1 cup fresh whole kernel corn (may use frozen)
1 cup cooked lima beans
1/2 cup sliced carrots
1 cup chopped broccoli or broccoli florets
1/2 cup chopped celery stalk
1 cup cooked, chopped chicken breast or thighs
2 tbsp chicken bouillon granules
1 tsp garlic powder
1 1/2 tsp Worcestershire sauce
In a large saucepan or a stockpot, combine all ingredients. Stir to mix, cover pan and bring ingredients to a boil. Reduce heat to low and simmer for one hour.

I lived next door to my grandmother and I can remember helping the aunts carry in their salads and casseroles for large family dinners. Some of these salads may remind you of those days in your life. Choose from Cornbread Tomato Salad, a Creamy Rice Molded Salad or the Stuffed Pear Salad and go back in time.CORNBREAD TOMATO SALADThis recipe is from an old yellowed newspaper clipping.1 pkg (6-oz) cornbread mix4 medium tomatoes, chopped1 green bell pepper, chopped1 yellow onion, chopped1/2 cup sweet pickles, chopped9 slices bacon, cooked crisp and crumbled1 cup mayonnaise1/4 cup sweet pickle juiceBake cornbread according to the package instructions. Cool, crumble, and set cornbread aside.Combine tomatoes, bell pepper, onion, pickle and bacon; toss gently.Combine mayonnaise and pickle juice, stir well and set aside.In a large glass bowl, layer half of the crumbled cornbread, half the tomato mixture and half the mayonnaise mixture. Repeat the layers with the remaining ingredients. Cover and chill 2 hours before serving. CREAMY RICE MOLDED SALAD
This is an old recipe I found in my mother-in-law's things after she went to the nursing home.2 envelopes (2 tbsp) unflavored gelatin1/2 cup cold water3 1/2 cups chicken broth3/4 cup mayonnaise2 tbsp lemon juiceSoften gelatin in the water. Heat broth to boiling; add the softened gelatin and stir until dissolved. Add the mayonnaise and lemon juice; beat with an electric mixer until smooth. Chill mixture until partially set then whip until light and fluffy. Fold in the following ingredients:1 cup whipping cream, whipped2 1/2 cups cooked rice3/4 cup chopped celery1/4 cup sliced green onionsPour the mixture into an 8 1/2 cup ring mold that has been very lightly oiled. Chill until firm.Yield: 10 to 12 servings. STUFFED PEAR SALAD
18 gingersnaps, crushed1/2 cup crushed pineapple, well drained8-oz pkg cream cheese2 tbsp mayonnaise8 canned pear halves8 lettuce leaves1/2 cup sugar3 tbsp lemon juice1/2 cup orange juice1 egg, beaten1/2 cup whipping cream, whipped1/3 cup finely chopped pecans, optionalIn a medium mixing bowl, combine the gingersnaps, pineapple, cream cheese, and mayonnaise. Place each pear half on a lettuce leaf on the serving platter. Stuff the pear halves with the gingersnap mixture and chill while preparing the remaining ingredients.In the top of a double boiler, mix together the sugar, lemon juice, orange juice, and egg. Cook over hot water until thickened. Remove from heat and allow to cool. When the mixture is cooled, mix with the whipped cream. Pour over the stuffed pears before serving. Sprinkle tops with the finely chopped pecans, if desired. Enjoy!
