Grab a casserole dish and head to the deli. Order your food and have them put it right into your casserole dish. Yes, I’ve gone this. It’s expensive but it works. If you get asked for the recipe, just wink and say “It’s Grandma’s secret recipe”.
Whip up a big batch of pasta salad for only a few dollars, and have plenty left over to eat for lunch during the week. You will save money and look good showing up at the party with a great dish.
Pasta salad is truly one of the easiest meals to prepare. All you need are noodles and salad dressing. You can use pretty much any salad dressing on the market – the standards like Italian, Ranch, or, if you’re ambitious, your favorite homemade dressing.
Now for the fun part. Cook the noodles, following package directions and then drain. Pour the dressing on while the noodles are warm so they will absorb that entire good oily flavor.
Look around your kitchen to see if you have any of the following ingredients:
Fresh veggies – carrots, broccoli, green onions
Frozen vegetables – frozen peas are wonderful in pasta salad
Cubed or shredded cheese
Garbanzo beans (also known as Chick Peas)
Black Olives
Toss in whatever you can find. It’s an ‘everything goes’ type of recipe. Bring more dressing with you in case you need to add it later, and voila! You’re done.
If you’re feeling fancy, you can bring some cherry tomatoes, parmesan cheese, bacon bits or sunflower seeds as toppings. It’s all good.

A RECIPE FOR A SALAD

Salads are an excellent way to pump up your daily food with some essential and healthy nutrients; Salads can be prepared from everyday vegetables and are the easiest of all recipes. Kachumbar.
2 medium tomatoes
2 medium onion, peeled
4 tbsps chopped fresh coriander
1/2 tsp salt
2 tbsps lemon juice
Cut the tomatoes and onions into 1/4 inch pieces and put them in a non-metallic bowl.
Add all the other ingredients and mix.
Kosumbari
from South India.
Cooked Moong dal - 50 gms
Cooked Chana dal - 50 gms
4-5 green chilies
coriander leaves- a small bunch
freshly grated coconut - from 1/2 a coconut
Fresh cucumber - 1
Lime - 1/2
Mustard seeds - 2 tsps.
asafoetida - a pinch
Soak 50 gms each of moong dal and chana dal separately for one hour. Grate the coconut to get a handful of grated coconut. Drain the water from the moong dal and chana dal. Peel one cucumber and cut it into small pieces of the size of a pea. Chop two green chilies. Keep one spoon of oil in a kadai, warm it and put in mustard.
Wait till they splutter , then put the chopped green chilies, turn around and put a pinch of hing (asafoetida). Put the entire mixture onto the moong dal and chana dal. Add salt to taste and then squeeze the juice of half a lime (green variety). Turn around and then garnish the grated coconut.
Any salad with yogurt is called raita. A raita is a simple preparation made by adding fruits, vegetables or any other thing to beaten curds. Most Indian families enjoy curds either plain or in the form of delicious raitas as an accompaniment with lunch or dinner. Raitas are unique because they are cool and spicy at the same time. Indians cherish a large variety of raitas and the following are some of the recipes of raita.
Cucumber and Red Pepper Raita
1 cup of natural yoghurt
1/2 cucumber / diced or grated
1/2 red pepper / diced
2 sprigs of mint,leaves removed and chopped
Salt and pepper
Whisk the yoghurt with a little water to thin it to a smooth consistency.
Add the all remaining ingredients with the salt and pepper to taste. Mix well
Pour into serving bowl, garnish with mint leaves and chill.
MIX FRUIT RAITA
Ingredients:
2 cups Curd (yogurt)
3 Bananas
1 small Pineapple
2 Apples
1 Ripe Mango
1 cup Pomegranate seeds
Chopped coriander leaves
Sugar to taste
Salt to taste
Black pepper powder to taste
Preparation:
Stir the curd with hand mixer (Mathni) properly and mix salt, sugar, and curd is thick add little milk or water.
Cup all fruits in small cubes and add to the curd.
Garnish the fruit raita with chopped coriander and pomegranate.

To assure even cooking of meat, be sure there is some space between the pieces to allow for circulation of heat and seasonings. Some vegetables, especially onions and carrots, often take longer to cook than meat. Always place them at the bottom of the slow cooker. Chicken Marengo2 1/2 to 3 lb. frying chicken, cut up1 (1 1/2 oz) pkg. spaghetti sauce mix1/2 c. dry white wine2 fresh tomatoes, quartered1/4 lb. fresh mushroomsPlace chicken parts in crock pot. Combine dry spaghetti mix with wine; pour over chicken. Cover and cook on low for 7 hours. Turn control to high; add tomatoes and mushrooms. Cover, cook on high for 40 additional minutes. Cheesy Chicken 6 boneless chicken breasts 1/4 tsp. salt 1/4 tsp. black pepper 1/4 tsp. garlic powder 2 (10.75-oz.) cans condensed cream of chicken soup 1 (10.75-oz.) can condensed cheddar cheese soup Rub chicken breasts with salt, pepper and garlic powder. Place chicken in slow cooker and pour soups over the top. Cover and cook for 6 to 8 hours on low.

4 tsp Butter
18 Black olives, pitted & sliced
1 tsp Oil; olive
2 can Tuna; chunk, drained
4 large Garlic cloves, chopped
Pasta; penne, cooked and drained
1/8 cup Lemon juice
4 tsp Butter (add at end)
3 tsp Capers, drained
Melt butter with oil in skillet. Add garlic and cook 2 minutes. Add lemon juice, capers and olives and cook another 2 minutes. Turn heat to lowest setting. Add tuna & separate it (do NOT flake) with a fork. Heat through, stirring gently. Drain pasta. Add remainder of butter and sauce to hot pasta, tossing well.
Tomato Soup with Pasta
3 tbsp Olive oil
1/2 tsp Black pepper
1 small Onion, chopped
1 tsp Basil
1 lb Tomatoes, chopped
3 pt Stock
1 Carrot, sliced
1 cup Small pasta / broken vermicelli
1 Celery stick, sliced
1 tbsp Chopped parsley
1 tsp Salt
Heat oil in soup pot & gently fry the onion for 2 minutes. Add tomatoes, carrot & celery. Mix well with the oil. Sprinkle in the seasonings & stir together. Fry for 3 minutes. Add stock & bring to a boil. Simmer for 10 minutes then add pasta. When pasta is tender, serve, garnished with parsley.
Both Pasta Recipes yield 4 servings
