Black Bean Chicken Salad With Lime Vinaigrette Dressing That’s Suitable for Diabetics

If you are a salad person but you want a little more than just lettuce and vegetables, here is a recipe for you.  This black bean chicken salad with lime vinaigrette dressing combines healthy black beans, fresh tomatoes, bell peppers, onion, cheese, salad greens, and chicken.  This gives you a meal in one dish.  You have meat, vegetables, and dairy.  Combine all that with this tasty lime vinaigrette dressing and you add citrus and heart-healthy olive oil.  Not only do you have a complete healthy meal, you have a tasty one.  And this salad is perfect for diabetics too.  Give it a try and you will no doubt  add this new recipe to your file.

BLACK BEAN CHICKEN SALAD WITH LIME VINAIGRETTE DRESSING



SALAD:

6 cups mixed salad greens

1 1/2 cups cubed grilled or sauted chicken breast

1 can (15 oz) black beans, rinse well and drain

1 cup chopped fresh tomatoes

1 cup chopped green bell pepper

1/2 cup sliced, halved red onion

1/2 cup low-fat mexican-blend shredded cheese

DRESSING:

1/4 cup finely chopped fresh cilantro

1/4 cup finely chopped tomato

1 tbsp vinegar (I prefer cider vinegar)

1 tbsp olive oil

1 tbsp lime juice

1/2 tsp lime zest

1 garlic cloved, minced

dash of salt

1/4 tsp freshly ground black pepper

1/4 tsp chili powder

In a large salad bowl, combine the salad ingredients.  In a food processor or blender, combine the dressing ingredients.  Place lid on container and process until you have a smooth dressing.  Pour dressing over salad and toss to coat.

Makes 4 servings.  Each serving:  298 calories, 26 g carbs, 28 g protein

MEDALLIONS OF PORK W/RED WINE SAUCE

Ingredients

8 Slices boneless loin of Pork, 3 oz. each, trimmed of Fat

1 Whole clove

1/2 c. Red wine

1 Tsp. Balsamic vinegar

2 Tsp. Honey

1 Tbs. Olive oil

2 Tbs. Finely chopped shallots

2 Tbs. Butter

1 Tbs. Freshly grated ginger

1/2 Tsp. Dried thyme OR 2 Springs of fresh thyme

1 Bay leaf

Salt and pepper to taste

Directions for red wine sauce recipe served with medallions of pork: Place pork slices on a flat surface. Pound lightly with a mallet. Sprinkle with salt and pepper. Combine ginger, thyme, vinegar, bay leaf, clove, wine, and honey in a bowl and blend well. Place sliced pork in a dish and pour mixture over it. Marinate for 10 minutes. Drain the pork medallions and pat dry. Reserve marinate. Place meat in a single layer in skillet in the hot oil. Cook for 5 minutes, turn and cook for 5 minutes more over medium high heat. Reduce heat and cook meat for 2 minutes more. Transfer meat to a dish and keep warm. In skillet add the shallots and cook stirring until wilted. Add the reserved marinate and cook, stirring and scraping the bottom. Cook until marinate is reduced to 3/4 its original amount. Swirl in the butter and pour the sauce over the medallions. Remove bay leaf and sprigs of thyme before serving.

FRUITED CHICKEN SALAD

Ingredients

2 c. Cooked Diced Chicken OR Turkey

2 Tbs. Soy Sauce

1 c. Diced Apples

1 c. Orange Sections

1/2 c. Halved Green Grapes

2 c. Chopped Celery

Lettuce Leaves

Directions for chicken salad recipe: Toss Chicken With Soy Sauce. Let Stand 15 Min. Mix Fruit With Celery, Add Chicken. Mix Again. Chill. Blend Dressing: 6 T. Low Fat Yogurt, 5 T. Low Cal. Mayonnaise, 4 T. Skim Milk, 2 Packets Equal, 1/4 t. Pumpkin Pie Spice. Arrange Fruited Chicken Salad On Lettuce (About 1 Cup Each) On Lettuce Leaves. Spoon Dressing Over Salad

4 cups diced poached chicken, recipe follows1 stalk celery, cut into 1/4-inch dice4 scallions, trimmed and thinly sliced or 1/4 cup sweet onion cut into 1/4-inch dice1 1/2 teaspoons finely chopped fresh tarragon or fresh dill2 tablespoons finely chopped parsley1 cup prepared or homemade mayonnaise2 teaspoons strained freshly squeezed lemon juice1 teaspoon Dijon mustard2 teaspoons kosher saltFreshly ground black pepper

In a mixing bowl, toss together the chicken, celery, scallions and herbs. Set aside.

In a small bowl, whisk together the mayonnaise, lemon juice, mustard, salt and pepper to taste. Add to the chicken and mix gently until combined. Refrigerate until ready to serve.

Cook's Note: Serve on a bed of lettuce with sliced tomatoes, in half an avocado or in a chicken club sandwich made with artisanal bread, crispy smoked bacon, vine-ripened tomatoes and lettuce.

POACHED CHICKEN FOR SALADS10 sprigs parsley2 sprigs fresh thyme1 small onion, halved1 small carrot, halved1 stalk celery, halved3 pounds chicken breasts halves, on the bone and fat trimmed5 to 6 cups chicken broth, homemade or low-sodium canned

Put the parsley, thyme, onion, carrot, celery, and chicken breasts in a medium saucepan. Cover with the broth, and bring just to a boil. Lower the heat to very low and cover. Poach the chicken for 20 minutes or until firm to the touch. Remove the pan from the heat, uncover, cool the chicken in the liquid for 30 minutes.

Transfer the chicken to a cutting board and reserve the liquid. Bone and skin the chicken and cut the meat into 1 inch cubes. Discard the bones and skin.

Strain the broth and store, covered, in the refrigerator for 3 days or freeze for later use. Remove any fat from the surface of the broth before using. Yield: 4 cups cubed chicken or 4 to 6 servings

Quick and Easy Chicken Salad Recipes

As a kid, I loved tuna salad. Because I was so picky, it was one of few foods that I ate. My mom used to go so far as to pack me a tuna sandwich when she and my brother went out for pizza (as that was not one of my accepted foods at the time).  As I got older, I started to experiment with different foods, and one day while at a friend’s house, I tried chicken salad for the first time. Up until that point, I had never thought of creating a mayo-based sandwich filling with cut up chicken, one of my favorite foods.

My friend cooked a few chicken breasts (which I marveled at since I was young and had no experience cooking my own meat) and then the two of us mixed in some mayo, chopped celery, raisins, salt and pepper. I was blown away by how delicious it was. Every time I hung out with that friend after school, I would request that we make chicken salad, and I even asked my mom to show me how to cook my own chicken so I could make it at home and pack chicken salad sandwiches for lunch.

To this day, I enjoy creating chicken salad variations with nuts, dried fruit and fresh herbs. My favorite is still the classic mayo, celery, salt, pepper and raisins combination, but I’m always looking for new variations. I found a great selection of recipes on RecipeLion.com; they have everything from classic chicken salad and fruit-filled chicken salad to baked chicken salad recipes and even a low-fat version. I loved the unique idea of adding artichokes and sundried tomatoes, two items that I love but never would have thought to include in my chicken salad.
