Cook slowly for three and a half hours then increase the temperature to 180°C and bake for a further 30 minutes, or until the pastry is golden. Serve with chips and roasted carrots and parsnips.

To assure even cooking of meat, be sure there is some space between the pieces to allow for circulation of heat and seasonings. Some vegetables, especially onions and carrots, often take longer to cook than meat. Always place them at the bottom of the slow cooker. Chicken Marengo2 1/2 to 3 lb. frying chicken, cut up1 (1 1/2 oz) pkg. spaghetti sauce mix1/2 c. dry white wine2 fresh tomatoes, quartered1/4 lb. fresh mushroomsPlace chicken parts in crock pot. Combine dry spaghetti mix with wine; pour over chicken. Cover and cook on low for 7 hours. Turn control to high; add tomatoes and mushrooms. Cover, cook on high for 40 additional minutes. Zucchini Chicken 1 frying chicken, cut up 1 tsp. seasoned salt 1/4 c. flour 1/2 tsp. salt 1/8 tsp. pepper 2 tbsp. grated Parmesan cheese 1/2 tsp. paprika 1 lb. zucchini, cut into thin slices 1/2 c. chicken bouillon 1 (4 oz.) can mushrooms, drained Sprinkle chicken with seasoned salt. Combine flour, salt, pepper, cheese and paprika; coat chicken with mixture. Place zucchini in bottom of crock pot. Pour bouillon over zucchini. Arrange coated chicken on top. Cover and cook on low for 5-6 hours or until tender. Turn to high and add mushrooms and cook for an addition 15-20 minutes. Cheesy Chicken 6 boneless chicken breasts 1/4 tsp. salt 1/4 tsp. black pepper 1/4 tsp. garlic powder 2 (10.75-oz.) cans condensed cream of chicken soup 1 (10.75-oz.) can condensed cheddar cheese soup Rub chicken breasts with salt, pepper and garlic powder. Place chicken in slow cooker and pour soups over the top. Cover and cook for 6 to 8 hours on low.

1. In a small saucepan, melt butter. Add rosemary, parsley, garlic, salt and pepper.

2. Place chicken with breast side up on a rack in a roasting pan, tie drumsticks together with cooking twine.

3. Spoon half of the butter mixture over chicken.

4. Arrange vegetables around chicken, drizzle remaining butter mixture over vegetables.

5. Cover and bake at 350 F for 1 1/4 hours, basting every 30 minutes.

6. Uncover, bake one hour longer or until a meat thermometer reads 180 degrees, basting occasionally.

7. Cover and let stand 10 minutes before carving.

Tex-mex Chicken Salad Perfect for Hot Summer Days

For a new twist on a chicken salad, try this Tex-Mex Chicken Salad.  With a refreshing combination of salad greens, veggies, and grilled chicken tossed with your own home-made lime vinaigrette, it is perfect for hot summer days.  But it is also a good choice for any time of the year.  For a little south-of-the-border feel, hang a pinata, lay some mariachis on the table, bring out your colorful place mats and salad plates. Serve the salad with baked tortilla chips rather than bread or crackers.  Put salsa and guacamole in colorful dishes to add to the scheme.  A little salsa music in the background would help to set the mood.  There you have it, a quick and simple patio meal.

BLACK BEAN CHICKEN SALAD WITH LIME VINAIGRETTE DRESSING

SALAD:

6 cups mixed salad greens

1 1/2 cups cubed grilled or sauteed chicken breast

1 can (15 oz) black beans, rinse well and drain

1 cup chopped fresh tomatoes

1 cup chopped green bell pepper

1/2 cup sliced, halved red onion

1/2 cup low-fat Mexican-blend shredded cheese

DRESSING:

1/4 cup finely chopped fresh cilantro

1/4 cup finely chopped tomato

1 tbsp vinegar (I prefer cider vinegar)

1 tbsp olive oil

1 tbsp lime juice

1/2 tsp lime zest

1 garlic clove, minced

dash of salt

1/4 tsp freshly ground black pepper

1/4 tsp chili powder

In a large salad bowl, combine the salad ingredients.  In a food processor or blender, combine the dressing ingredients.  Place lid on container and process until you have a smooth dressing.  Pour dressing over salad and toss to coat.

Makes 4 servings.  Each serving:  298 calories, 26 g carbs, 28 g protein
